I purchased a Craftmatic adjustable bed for $5,000+. The bed does not work as demonstrated, they refuse a refund or to take the bed back. When contacting the company they keep telling me I signed a purchase agreement. But I signed it under false representation, their product does not do what they said it would. What consumer protection law can help me fight this? (The last time I spoke to them I was told it would take 2 months to break in, never mentioned during salespitch).

Sales company usually does this things like over-emphasizing their products use, quality and so beyond its real capability. As the familiar saying goes Caveat Emptor-Let the Buyer Beware.
Asking for consumer protection law, there are pertinent federal and state laws that cater to this kind of legal predicaments. The best thing to do in your situation is to confer with a qualified Attorney in your area to determine your options in this respect.
